I have a sweet tooth, and my favorite Australian dessert is Pavlova. Have you heard of Pavlova?
It's a large meringue cake, topped with fresh whipped cream and fruits. Usually, meringue is solid throughout, but pavlova meringue is crisp and crunchy on the outside, and soft and marshmallow-like on the inside.
It's very popular in the summer, I recommend you try it!
